Welcome to Hat Yai (หาดใหญ่), the biggest city in Southern Thailand and one of the biggest cities in Thailand. It was my first time to visit and I was thrilled to have a chance to explore the amazing food and mix of cultures. But of all the delicious street food in Hat Yai, there’s nothing more famous than Hat Yai Fried Chicken (ไก่ทอดหาดใหญ่). When you mention fried chicken in Thailand, immediately people from the entire country will think about Hat Yai, and you can find Hat Yai style Thai fried chicken in pretty much every town and village throughout Thailand. There are a couple things to first know about this style of fried chicken. Number one is that it’s usually a very light batter - not bready. The marinade often includes some Thai spices like coriander seed and roots, pepper, and sometimes milk. The chicken is fried so all the golden crispiness is coating the meat rather than on the breading. Next, Hat Yai Fried Chicken (ไก่ทอดหาดใหญ่) is almost always eaten with sticky rice. Finally, it would not be Hat Yai Fried Chicken (ไก่ทอดหาดใหญ่) without crispy fried shallots. That combination is what makes it what it is, and it’s crazy good.

Ba Sao Fried Chicken (ป้าสาวไก่ทอดไม้ฟืน) - https://goo.gl/maps/akeF6xsgRYyYdDut8 - What’s especially cool about this old school fried chicken stall is they still cook over wood fire. The chicken is crispy and delicious.
Kaitod MEENA (ไก่ทอดหาดใหญ่มีนา) - https://g.page/KaitodMeena?share - Located right at the main market in Hat Yai. I loved the biryani with fried chicken, and the owners are so friendly.
Sofeeya Fried Chicken (ไก่ทอดซอฟียา) - https://goo.gl/maps/vYQte8HeDSnw9DmC6 - This is some of the best fried chicken I’ve ever had in my life. Very locally popular.

Khun Mark, even though Hatyai fried chicken has the nationwide fame, this kind of fried chicken has its own roots from Thepha district of Songkla province according to the local people of Hatyai and Songkla.
Regarding the oil that is used to fry the chicken only once, it is black because it is fried a lot of chickens and there are spices to mix. When frying the oil, it will be sold for fuel. People come to buy to convert into car fuel.
