CEBU, PHILIPPINES - Welcome to Cebu, one of the greatest food cities in the Philippines! Today I’m hanging out with my friends Bhen and Yuri, and we’re going on an ultimate Filipino street food tour - which turned out to be more of an exotic food tour - eating some of the unique, wiggly, and incredibly delicious foods that you can find in Cebu!

Here’s everywhere we ate on this Cebu street food tour:
1. Jerbie's Kandingan (https://goo.gl/maps/qtGdckUimtoYn3jV9) - Naga, Cebu, Philippines - Early in the morning we started at Jerbie's Kandingan, known for their variety of stews, and especially Balbacua, a Filipino beef stew using all the hoofs and collage rich parts. The recipe is quite complicated with onions and ginger and pineapple juice and peanut butter. The result is this sticky and extremely tasty stew that’s a perfect easy start to your morning. We also had some Soup number 5, legendary power soup in the Philippines!
2. Ginabot sa Pardo (https://goo.gl/maps/6Fhka3fNJqeAnLeF8) - One of the greatest Philippines street foods in Cebu is ginabot, the raffled flower intestines deep fried. But the highlight is the dipping sauce that includes onions, chilies, calamansi, soy sauce, and vinegar. It’s a perfect crispy snack!
3. Delfa’s Tungolan (https://goo.gl/maps/MTVhVvr67LM4SFsD7) - Next up on this action packed Philippines street food tour we went to the legendary Delfa’s Tungolan for her giant pig intestines stuffed with leek and green onions. They are deep fried and served again with the dipping sauce which makes it insanely tasty.
4. Brigols (https://goo.gl/maps/pbbS9eFLH4ugYL6U8) Mandaue City, Philippines - Another famous street food in Cebu is Tuslob buwa, pig brains melted with lard and scooped up with compressed rice. It’s fun to eat and it’s a delicious was to make full use of all the parts of the pig.
5. Matias BBQ (https://goo.gl/maps/Fhxj6D8khz3gazd79) - Finally to complete this ultimate Cebu street food tour we went to the iconic Matias BBQ, a household name in Cebu. We had some delicious organ skewers and tame chicken wings to end!

Hey everyone hope you're having an amazing day. It's Mark Wiens It's another beautiful day in Cebu the Philippines one of the food capitals. There's so many delicious things. They have an amazing street food culture Today I am hanging out with my friends Ben and Yuri and we are going to take you on an ultimate Cebu street food tour.

All right! Cheers! We are going to eat a dish called Babakua for breakfast and then we're gonna go around. We're gonna eat some of the local favorites. It's gonna be another day of an extremely delicious food. We're gonna meet some amazing people and see some of the processes of the cooking.

All of the action is coming up. You're not going to want to miss any of the food. so sit back and relax and let's get started eating our way through. Cebu Foreign good morning Ben Good morning Mark How are you today? I'm good.

All right. Yeah, what are we eating First today? So first time to eat the Babakua, right? It is the place the best. Uh, one of the best here in Cebu and we're actually a little bit south of Cebu the city right we're in is it called Yeah, this is where we're gonna start. We're going to see some of the process of the cooking the giant bones and from what Ben has told me, this is one of his favorite dishes.

Yes, there's an oxtail, there's a big skin Oh joint of them. Excellent. Yeah, are you all cooking? Oh this is the number five. There's already uh some soup number five which is the the male organ soup.

Male organs from the beef? Yes. And then we also have some like Yes! So they not only have Barbacoa but they have many other dishes. But we're especially gonna focus and see the babacoa preparation that goat caldereta is ready that smells so good. That's a goat stew.

There's I think tomatoes and carrots and uh, potatoes in there. Yeah, this is the skin of the beef. Yeah, then these the joints. I'm not sure if there's an oxtail inside here.

Is this for the bubble culture? Yes, it's time to get started on the Barbacoa And this is the main dish that we came to eat here. Uh. and it includes all sorts of beef parts and beef skin, beef joints. All that tendon, uh, the Bones have already been boiled for six hours overnight so those are ready.

but now they're getting ready to fry it all up and make the soup and make that uh like thick soup that it's gonna come. So there's also preparing some of the vegetables, onions and garlic. Uh, red peppers and green peppers are going to go in. Oh foreign.

Pineapple juice? Yeah, Oh yeah. and that's the crop. Such a unique and complicated recipe and just rapid fire. he adds in.

I Mean there's peanut butter, There's black beans, there's pineapple juice, all of the the cow Parts which have been boiled overnight. Uh, there's all the fresh ingredients. the green chilies, the red chilies, the spring onions. So many different things going on and that's just like a sloshing around pot of beef parts.

It's a unique and it's a delicate dish here in Cebu. Yeah, it's really nice to see in front so it actually doesn't take that long to cook because they've already pre-cooked all of the bones and those are already fall apart, melt in your mouth tender. So once they just combine all of the seasonings, bring it to a boil. It's pretty much done so we're pretty much good to go.
He's gonna scoop it into the serving pot and then we're gonna head over to start eating. Thank you So you can tell how wobbly and how tender all of those beef parts are gonna be. Oh man, even the sound of that kind of sloshing around. Oh I Can't wait to try it! Uh, Bubble Coat typically be eaten for breakfast or any time of the day any time of the day.

Okay, yeah, they have also barbecue here the Subba. it's a pork. Grill Yeah and so this place is called Derby's Carinderia. Just like mini carinderias, they cook in the morning and so I mean you can come throughout the day.

They do serve throughout the day. However, if you get here early in the morning, it's the best time because that's when all the food is cooked fresh and hot. Foreign? So Huge. Yes! Mark Finally and it is thick, thick and you can see all that collagen has come out.

Oh it's so wobbly. Whoa. that's like the whole ankle. Should we just bite? Yeah.

I'll just bite these on. Oh hot and fresh wobbly. look at the Jiggles The Jiggles cheers. Oh the pineapple juice.

Yes! Jason Acidity of the pineapple juice. Unbelievably soft and tender. melt in your mouth, all the joint material. Oh you even taste the saltiness from those black beans.

Oh like so much going on. Oh so much flavor on this dish. Yeah it is. So another thing you can do is take some of the soup onto the mice and again you could.

You could choose rice or mice, but in Cebu mice seems to be the very popular popular option, right? Yes, Correct. It absorbs it all. So creamy, so good. Wow.

You can just feel that on your lips. The stickiness, the gooeyness, the wobbliness. It really melts in the mouth. so then you can just break into that skin and that that collagen, the tendon in there so wobbly.

Look at this. Oh the splatter. Yeah. And then finally we have this season.

This is. uh. anchovies. fermented anchovies? Yeah.

and is that to be eaten along with the bubbles? Okay, the chili. The chili. Okay, then there's a lemon here. Okay, yeah.

grabbed up one but this one is quite salty. Okay, yeah. oh thank you. Okay, then we add some anchovies.

Yeah. and then again, we bite it. Yeah, foreign. Yeah, that is fishy and salty.

but with that that uh lemon tomato to kind of break the saltiness that is powerful. the bones are just sliding out. okay with the jelly. Oh man, my hands, my fingers are actually stuck together.

Yeah, adhesive is the goat called that I thought Goat Stew: One of the dishes I love to eat in the Philippines as well. Tomato, potato, carrots, carrots in here. tenderness. Oh pick it up, that's a better idea.
Yeah. the drumstick. Oh wow. that is melt in your mouth so tender.

Final dish: we have soup number five. All of the the bowl organs are in here. The Bull male organs are in here, chopped up into bite-sized pieces. Oh, that's a wobbly bit.

Oh, and there's black beans in here as well. All right. Oh oh, that one is amazing too. It is so tender.

The the bowl male organ just kind of melts in your mouth with jigglyness. You barely need to chew. Hmm. Oh, and you taste some ginger in there too.

Yes, because ginger in there. That's it right there. Everyone's favorite for the guys. and there's yeah.

it's especially good for for men, right? for men. Oh, the soup number five is actually fantastic. It is everything here actually. thank you very much.

So when you're in Cebu Highly recommended! come to Jervis Carinderia for the Babakua and all the dishes and let's move on to eat more food right? Yes, the whole day we go to Ginabot in Pardo that you have to eat when you're in Cebu Yes let's go hello hi Marquis yeah we're here in Pardonabutan the famous um it's right here. Yeah Awesome! Mark yeah hello. nice to meet you and so we are here on the corner. it's a busy neighborhood and this is just full deep frying action.

He has intestines. He has some a variety of organs that they deep-fried they're legendary. uh Ben and Yuri have made a video here and he's just such a friendly man. But they're most famous for their Ginabot which are intestines.

It almost looks like a like a fortune cookie or like a pastry. straight flower intestines. foreign. oh this is so crispy.

Mark Yeah yeah so that's the ruffle fact. some part of the pig intestine and it really does look like a flower because they kind of like it looks like a blooming flower with all the Ruffles the ruffle fat. It's one of the prized street foods of Cebu And you're telling me what's the what's the word for Just kind of like taking a squat on the side of the road. Okay, yeah, and that's where this type of street food stall is known as.

Okay, we're gonna glove up for this gloves. That sauce looks amazing with the onions and the peppers. and the calamansi. We start with the soy sauce.

Together we have vinegar. Okay, so a little bit of soy sauce. coconut vinegar. Oh that dipping sauce is amazing.

The double? Okay, All right. Oh look at that. Chili's in there. Color mine and squeeze the calamansi.

Yeah In the calamansi. Yay! Whoa. Like you can smell that vinegar. You can smell like almost a alcohol coming out of that vinegar.
Okay, then we call it yeah. Coconut vinegar. I Cannot wait to try this. It's hot and fresh right out of the oil.

Okay. Ben We scoop. Yes, he's the one. Oh, it's so crispy.

and Light Oh okay, then you get some calamans. Uh, the chili and the onions get it all into one bite. Oh, this looks incredible. Try to scoop up.

Oh I Like how it just holds it holds everything in those those flower arrangement. All right? All right. Ben Cheers Thank you! Oh wow, it's so good. it's so crispy.

Oh I Gotta dip again. All that vinegar is amazing. The chilies and the onions. Oh, you want to scoop up as much as you can? Mmm Oh that's incredible to your mouth.

The flower petal edges are so crispy and then the inside is so gooey and rubbery and chewy. Yeah, the sauce is so amazing and so then we eat this together with the push-up yeah and then take out this one. Then we scoop inside and do the same thing. Same thing also.

Yeah, scoop it in. All those chilies are so good. The vinegar, the onions. the sauce is amazing.

Yeah, you get the vinegar is almost to the point of turning into alcohol. It takes you. They tastes that like fermentation and sourness controllers. Soy sauce.

It's one of the coolest dipping snacks ever. And I think it's just fun to eat as well. It's like scooping you dip everything. It's good to have street food here in the streets, right? Eating this kind of snaps appetizer.

a little drizzle on this one. Oh yeah. hmm. you can drink it.

Oh I Love the vinegar. All the vinegar. It is so good. Infused with the chilies and the onions and the glove makes it very handy to eat.

Yes, okay. last one then I Didn't know these would go down so easily. Yes, we'll love the vinegar mark. Oh so good.

Thank you Bye-bye Oh man, that was just Sensational Oh that was extremely tasty. Foreign. actually. it's kind of an exotic street food tour in Sobu, the next place where we have been we are in Belfast We're here for the Big Intestine.

Okay, all right yeah and it's a very popular place. It's a unique this year. Wow, all right and so we are with Delpha. and these are the the legendary intestines which are actually stuffed and they're actually boiled already.

but then they're gonna be deep fried to give them that extra. Edge So we're gonna. We're gonna watch them as they deep fry them. Now that's a fresh batch all right.

So you come to the front here. they have all the organs laid out. they're all marinated, they're all seasoned, you choose what you want and then they go into the the oil to deep fry. I Mean they have a bunch of things.

but really they're famous for the large intestines which are stuffed right stuffed with onion leeks. You can see this. oh yeah you can see the the onions poking out of them. So green onions are leeks.
He's the one stuffed inside. Yeah, you can see this one here. It's the onion leak. so weak, some others are straight into the butt.

This area here. Yeah, that's the opening. Yeah, that's the opening. Oh that one is serious foreign.

's gonna go in with the vinegar and soy sauce. The double pour. All right. All right.

these are slightly slightly terrifying looking. They're like just Wiggly sausages all natural, that massive intestine and now a lot of people would get it chopped and fried. but this is the experienced move right here. Ben Said we got to get it whole before chopping.

that way we can pick up the whole thing and go vertical. Oh yes, there we go. Oh they're just dripping and oozing off. It's like a snake.

Oh and then again the same drill we we go into the salsa one. The salsa one is just. oh. you curl it.

do you travel it in? curl it in. it's just. oh, they're so hot. Oh it's Burly there's onions and chilies and Calamine oh I forgot to squeeze the calamansi.

Yeah, we want to squeeze the squeeze the calamansi you ready? Ben Okay, hold on, let's go. It's all hot. Oh wow, it's really hot. No, it's so many fun to hold a bite.

Oh that's delicious. Yeah the onion in there. the wobbliness of it. It's chewy, it's crispy.

It is very clean tasting, very clean. They clean out all the Mickey using coffee. They actually cleaned the Poo out of it and stuff it. Replace the Poo with a within it with a green onion and so that's why it's actually very clean tasting.

Really good quality. Wow, that is the greatest. Pig Shoot, well just be honest, it's actually the butt area. Yes, Oh, but if that butt kind of provides a nice scooper, yeah you can scoop up more of the toppings, the chilies and the onions extra 50.

Well the that section is very crispy. like very like bouncy. That is quite amazing. I wish you could feel this in your fingers.

it's so squishy and wobbly. Yeah, the dipping sauce actually makes it really really spectacular as well. So tasty. And again, it's so much fun to eat like I Mean what wouldn't be more fun than grabbing an entire intestine and just biting it? Yeah, you got to make sure you do two pretty pretty well because it is like has a bouncy rubberness to it and the same thing here.

you would grab the push hole Yeah and then dip it into the salsa one. Okay, these are the three chopped ones. Also, these might be crispier because they're fries on more more edges. Again, do the dip.

There's a bit of a different texture when they chop it because it has more fried surface area for fried. but nothing can beat the fun of the whole the whole thing. Looks like people are loving this one. Dude, you are the intestines.

Champion Ben Yeah, you're smashing it Man, this has got to be one of the greatest intestine eating experiences in the world. And it's so much fun and so tasty. Friendly, local, laid back. This is probably the the most intestines action I've ever seen anywhere, but it is just so tasty.
So much fun to eat! What a spot! Okay so next up on this street food tour. we are right across from one of the big universities in Cebu There's a lot of street food around here we are stopping to eat at. It's another legendary dish that you have to eat when you come to Cebu So then additionally to what we're gonna eat here: Ben and Yuri actually own a small coffee shop here and they say it's a controversial coffee shop because it's very affordable and uh, yet, they're able to like serve like really Gourmet coffees and you can see the line here. It's so popular, so packed.

Veterinary's coffee shop only costs 39 pesos which is like how much is that in dollars? It's like 70 cents for a real American Like a caramel macchiato. Nice, refreshing, sweet, milky and creamy. Well, it's really refreshing. Yeah, definitely when you're in.

Cebu Come coffee at 39 we're right across from the University Come Support Ben and Yuri's coffee shop. So we're at a place. I mean it's right next to Ben and Yuri's coffee stall. It's called Briggles and they serve a number of dishes, but we came here to specifically try their twists.

means deep then? um. so we have to use the hanging rice to dig deep to the bubbles and eat it and the bubbles are made from Pig's brain and we're joined also with the owner here. what was your name again? Joshua Bragoli Joshua Very nice to meet you. Thank you for having us.

Thank you for coming by and this is a cool dish because you get to assemble it on your table by yourself and I think that's part of the fun of eating it? Yes, start with lard. This is the original process. The brain. okay.

Pig's brain. Soy Sauce: This is the original How we do the tofu board. Okay, original recipe. Yeah.

soy sauce. Turn around. we put some broth. Big broth.

this is Big Brain broth. Yeah Yes. I know this one is a bone. Oh that's a bone in there.

Okay, okay. a bone broth. Yeah. Liquefied brains for the saltiness.

Okay slices. You gotta eat it with the puso. The hanging rice scoop one. Oh nice.

nice. Oh it's bubbling. sizzling hot water. Okay Cheers guys.

Oh hot. Oh it's so good. Really hot. It's so premium.

salty and rich onions. The more broth goes in with a pig's brain. or Brands so you're just gonna keep on adding too. Yeah, as you keep on going, you add more and more.

Oh liver. Yeah things liver. okay. you can go closer.

All right. More broth, more broth. Yeah, oh sorry. no problem.

Just keep adding to it. All right. See the bubbles forming on the surface? That's when we need to too slow, right? Yep. All right.

Go ahead. do it. Okay. Second batch.

Oh so that's good. That's really good. Oh, good job on the seasoning. Ben You almost think it's like a Milky creamy sauce.
but that's all coming from the brains. Everything. Wow. Oh, that's hot.

Stir It Around The matter What? I Just amazing way to make use of bridge. Use it as a liquid as a sauce as a dip for Rice You got to get it to your mouth before it drips. Really a good dish, something you absolutely have to taste when you come to. Cebu So much action in people Bye-bye and bye-bye I'll see you guys See you guys Bye Bye! Okay what a fun environment and atmosphere and great people. And that too slow I was really tasty. Oh man, that's again. it's a fantastic way to make use of brains.

Ben Where are we at? We are here in As Fortuna Mandaue Here in Matcha's Barbecue we have reached the final place on this ultimate again. it's been exotic Bizarre Foods of Cebu but bizarre and extraordinarily delicious. More just like, uh, making use of every single part of the pig on this food tour and the cow. But it's been absolutely amazing.

We're going to one last place we're here. it's called Matthias Barbecue. This is a legendary place in I Mean it's it's one of the the household names of barbecue in Cebu All right! Shouts are Smoky Fire the fat hissing. The chicken looks extraordinary and so crispy.

Um, they brush on sauces and oils to keep it like going and hydrated and keep it moist. We just got. Oh, since we've eaten quite our share of food today, we decided to just go for chicken liver and chicken wings, both of which look superb. It's just a nice place to relax kind of at the end of the day.

Yes. And the mango shakes. Oh the mango shakes. Oh thank you.

it's Caramelicia. And would you eat this together with the salsa one again? Yes. Oh it's That's why there's two tones. the liver at the bottom, gizzard on the top, the drizzle method.

Okay, wow. all right there we go. Hey Cheers! Ben e Creamy and smoky. Oh, it's good.

Yeah, the calamanti, the chilies that's very tasty and the smokiness of that girl. Wow. It's so crumbly and so creamy melts directly to your mouth. Yeah! and lastly, the gizzards.

I Really like chicken gizzard. Dog bouncy texture, slightly rubbery. you'll feel the crunch inside your mouth. It has a crunch to it.

Yeah, it's been a meaty day. Yes, we've come to a final skewer. These chicken wings look superb. Look at that.

they Grill it until the skin is crispy. Oh man, let me tear these off skewer Maybe So we have better better dipping into the salsawan capabilities. Yeah yeah. ending with some chicken wings.

gotta dip into this also one. Oh it's so moist and juicy. a little bit sweet and salty and smoky. You can feel the barbecue sauce in here.

Oh it's so tasty! Oh man and what a day! A huge thank you to Ben and Yuri for showing me around! Um, we ate a lot of like unique Foods foods that you have to come to Cebu to eat Beninuri! They did an amazing job of taking us around to some of the best places. some of their favorite places. We couldn't have done this without you guys!     I graduated from that school, Cebu Doctor's University. Batch 2009 ❤Even at that time, there were already so many food stalls and food huts surrounding the building. Mostly siomai, ginabot, grilled meat and other affordable meals.
