SURABAYA, INDONESIA - Today we’re going to eat some of the best food in Surabaya from the island of Madura!

Madura is an island located right across a small channel of water from the main Java island of Indonesia and from Surabaya. So within the major city of Surabaya you’ll find many people from Madura and a huge selection of Madura food. Food in Madura is famous around Indonesia - for example one of the most common versions of satay (sate) is Madura Sate. Today we’re going to eat five unique Madura foods, that you don’t want to miss.
Soto Madura Imam Bonjol (https://maps.app.goo.gl/7xWi7YgrAGxCMWKb6) - Soto Madura is a beef soup, commonly eaten for breakfast, and it’s one of the best soups I’ve had. So good and so flavorful.
Warung Kongde Mbak May (https://maps.app.goo.gl/Ss6T6zWADj1Sbby18) - Welcome to probably the funniest food stall in all of Surabaya, maybe in all of Indonesia!? Warung Kongde Mbak May serves Madura style rice and mixed dishes and the flavors are spicy and intensely flavorful.
Bubur Madura - Typically you think of rice porridge as savory, but this rare Madura style of rice porridge is sweet, with a variety of jellys and palm sugars. It’s quite a complex and delicious dessert.

Today we're going to go on a Madura food tour. We're going to eat some of the best dishes from Madura Has so much flavor to wake up to in the morning anywhere. They serve sball chilies in a massive play bowl for you. This is my kind of place that's spicy.

literally as much flavors you could have in your mouth. At one time she scooped me about half a dozen different dishes. One of the reasons this place is so legendary is because it's called K Day and K means a Big Big Big Big big I'm in Suraya Indonesia Hey everyone good morning, Hope you're having an amazing day! It's Marqueen! Sudaba is home to an abundance of food that comes from the island of Madura and also a huge population of people from the island of Madura. It's bright and early this morning.

we're beginning at the first spot, something that's extremely popular for breakfast. Madura Style breakfast. this is the very famous. Soo Madura Okay yeah, this is a beef soup with a lot of organs.

I Think they also have a Brin oh okay wow and so they uh, this is something that's very common for breakfast Madura Yes I Love the the traditional cooking method. The pot of beef soup sits kind of like on an angle with a fire on the bottom slowly burning so it stays hot and fresh as they serve it. and all from this. kind of like almost like a carrying cart.

Oh that broth smells incredible. that's so thick too a some shallots go in, it's egg. I'm pretty sure that they cook all of the beef parts. I mean they have literally the entire cow, every part chopped up that makes that goes into the soup.

and I think they boil it within the broth, but then they kind of separate it to keep that broth separate to keep heating that broth. Uh, and they then they separate all the meat parts, all the beef parts. and then when you come here, you can literally choose any part you want. from the intestines, to the lungs, to the brain, to the meat, to the ribs.

Uh, they'll put that into your bowl. they mix it with the seasoning, some salt, some coriander, some fried chots, and then he just scoops on that hot hot broth. Oh that smells beefy that smells so good. Oh man, oh that's incredible.

Oh, that's so so. I Mean it's meaty, but it's balanced with those herbs. the turmeric. the shallots give it a nice fragrance that chander in there.

Oh, that's soothing. I mean you could tell that it's rich and thick and beefy, but it's also been strained I Think some of that fat has has just been strain so that it's clean. A perfect breakfast. Let's try seasoning first.

So lime juice if you want more salty you can add. uh, this is the ketchup Asin the salty salty salty soy sauuce Sal Like soy sauce, right? sauce. Yeah, and then of course the Sbal. Of course.

Sbal. Yes, Sbal is. Sbal is Sbal is life life Yeah, not Spicy. Not eating? Yes, yes, it actually does have a little bit of an acidity already.

Uh, but definitely some lime juice will will really make it good. Wow. A nice squeeze of lime juice. Got to add some sunball.
Okay oh. we also got an egg in here too. We got some meat. We got the lungs.

We got the stomach in the intestines okay and then rice. We need to eat this with rice. Rice is in these little packets little Banana Leaf packets of rice. Oh this.

The rice is kind of compressed in that that packet as well. Let me try that broth again. First that now that I've seasoned it. Oh oh yes.

wow it's so good. Oh man the spice from that sball the squeeze of lime juice to give it that acidity onto the rice. Next we got the intestines hereo you really want to add broth to the rice. And you said you come here often Often all the time often.

Yeah, one of your favorite places for breakfast. This one of my favorite place for breakfast. Okay, great, great. That beef soup is amazing.

Yeah it's so good. Oh wow it's so it's such a good breakfast too it. so it's hearty but clean. Beefy.

Natural turmerican fused shallot has so much flavor to wake up to in the morning. Let's try the next the next organ. I Think this is the stomach here. Very clean.

Yeah Mhm Yeah the organs are really so clean. Yeah you can take tell they really know how to prepare organs. probably clean them really well. don't have a a strong taste at all.

just really tender and clean. Okay next up for the egg. Oh so there's beef and chicken eggs and I think we need to add some sambal? Yes and then you can never have enough of that broth. Oh man that sball is incredible.

Oh and some. and and booty over here of course with the with thank you so these crackers are coming to eat with it as well. Okay that's the way. Oh yeah they're really puffy and Airy and salty so that kind of contrasts the I mean gives you a crunch somehow does go extremely well with the soup.

This is. this is a Madura style Breakfast of Champions Absolutely complete flavor. So good. so clean.

I Mean they are experts at the Soto mura. It is so good. That's a therapeutic beef soup. Unbelievable flavor.

Oh oh yeah, it's starting to sweat in the morning. That's a sign of a good breakfast. This place is called Soto Madura Imam Bondol and that's the name of the street here that's just straight up unbelievable world class beef soup that is a breakfast of champions Madura style in Suraya. So next up on this Madura street food tour we're going to a place that's absolutely legendary.

It's extremely famous. It's a stall that serves Nasi Madura So rice with Madura style different dishes that you can choose from. It's right down this alley, kind of slotted right between two buildings. there.

there's always a crowd here. Oh yeah, wait wait, what does K what does K mean Uh K K uh means uh big uh you know, uh big I'm sorry, a big sorry, but that's the the real name of K Wait, he's laughing over here. K K Okay, okay, so one of the reasons this place is so legendary is because it's called K And K means a big big backside. A big backside.
A Big butt. It's a great nickname and makes for a great restaurant name. So here we are. That's partly why it's so famous as well.

And the owner here is extremely nice. Immediately as we come here, she's inviting us to the back. Salat Pagi and she is the owner. The extremely friendly.

Okay, good morning morning. Yes, good morning, good morning. G Okay, the beef Curry This place is incredible. So many there.

I Mean there's dozens, a couple dozen different dishes to choose from. You can see the chilies, the spices, the oiliness of some of the dishes just simmering away. The Aromas back here are incredible. The coconut I Think it's one of the restaurants where I mean it's chur style so you could choose rice.

there's noodles and then you can choose the different dishes that go on top. Oh what a spot! What a spot! I Think it's mango mango M Mango and okay I definitely have to get a mix of different dishes and that sball looks absolute fire with the Green Mango with the coconut me and sball Yes, this s too yes. Every sambal. Chumi? Yes please! CH Okay Chumi Chum We got to get the squid.

That's one of the most famous dishes here. Yes! Chi Oh, there's eggs in the curry too. Yeah yeah. and T yes Tung is the mackerel.

Oh that's Beal. All right, that's the kind of like a fried beef. I Think yeah. okay wow, that's a mountain of a plate.

Naked shrimp. Okay, okay okay okay okay and here's the good morning. And here's the plate she dished out. Oh it's hot.

mad mad. Here's the plate that she for me. I mean this is one of those places you cannot make a bad decision. Everything is good, but she scooped me about half a dozen different dishes.

Looks like it's going to be one of the greatest plates of Madura Nasi Madura that you could possibly eat. The flavors are just bursting, overflowing amazing Amazing! She's such a character. Everybody loves her I Love her I Love you I Love you I Love you I Love you Big Big Big The Big Big The Big Big The Big big. She's a chef.

She's a comedian yes and she's the best chef. K Day K Day K I'm exiting from the food stall. It's like a it's like a Slot Canyon Street Food Slot Canyon wow oh that's the sambal. Janu If you keep walking down the the lane, there's so many other dishes they have S with uh, chicken intestines with clams and they also have this other dish s Chano which is a sball in a clay clay bowl with vegetables on the side that you can scoop out that looks fire.

So we got a mix of probably half a dozen different dishes. but I Got to start. let's try that squid with the black ink and she said there's I think there's eggs on the inside as well. Oh man the squid is amazing.

Yeah filled with the eggs. The squid is so tender You' got that black ink so that gives it its sauce and flavor. Oh it's so good. Oh and then with this bite I want to go in for some of that some of that sball with the Green Mango as well.
Oh man the sourness of the Green Mango the fresh chili in there. oh that's incredible flavor. Okay let's move on to the next protein and we've got that beef. I think this one is the beef Curry that was smoldering.

that's that's uh, simmering non-stop the Madura style beef Curry m Oh man that has so much flavor Again, the curry paste has a bit of a sweetness to it, coconut and to garnish. let's go for some of the sambal chano. Super spicy. You can see some limes in here.

Oh and you pick it up with the vegetables. Oh wow yes, just in case your mouth needed more flavor, that's another burst. Chilies the lime juice. oh that's incredible.

And when you eat it together with that cucumber that just gives it so much Crunch and refreshing. Okay, next up there's dry coconut as well. And then we have the those shrimp. Those fried fried shrimp.

Oh man, there's coconut in so many different forms. I Love the coconut. the dried coconut there that gives it a condensed coconut flavor plus a toasty Aroma to it as well. This dishes I mean similar to other food that you'd find, but it definitely has a distinct Taste of muda.

Really nice like toasty coconut flavors. This is a spectacular plate of food and it's just pure overjoy and happiness. The owner just makes it even better. Okay, next up for the tono.

this is the mackerel. I'm going to add on some of the mango sambal as well. It's just dish after dish. So good! Yeah! I'm starting to feel like I just jumped in a swimming pool though bathing in sweat I mean I wouldn't want to have it any other way.

That's the best way to enjoy your meal. When you are covered in sweat from head to toe and your shirt is drenching, you know it was a successful meal in Suda. Let's part the meats and there's noodles on the bottom there too. Taste that with another bite of the sambal Chano.

Oh man, that is fire fire. Oh oh I Love the food. It's literally unbelievable flavor. It's just as much flavor as you could have in your mouth at one time.

This is an outstanding plate of food. Okay, another dish we have is the AAL The beef. Oh look at that. Look at the tenderness of that beef.

You can see there's some marinade on there too. maybe some herbs and spices. Smells like coconut as well. Oh wow.

that spice blend feels like it's been fried with all of those spices just caked onto the surface of that beef. lemongrass, shallots, and garlic. Maybe turmeric, maybe coconut. It's tender and lean at the same time.

The egg as well and the Egg was boiled with the beef. Oh it's a nice little like a one biter egg. mhm almost has this like bounce to it, kind of like the white has hardened and tightened. It's tight.
It's a tight egg. Oh man. and I cannot get enough of this Sball I even love I mean the display how it's served. Oh wow anywhere they serve sambal chilies in a massive clay Bowl for you which is my kind of push.

And then we also have the they're famous here for their Sa with chicken intestines. Yummy but spicy. oh this. really tasty.

Oh it's really tender it. definitely some Sbal on here as well. Tast a little bit of pepper. Chili's all the tenderness.

It just keeps on going. keeps on unraveling. Yeah, it just keeps on going. It's a never- ending intestine.

Oh, top it. Top it off with some sunball. Yes, those are the type of chilies that when you take a bite, the fumes of the chilies, the seeds just kind of goes up your nose straight to your head. Oh oh man.

Mhm yeah. And I mean what a spot. They've just gotten busier and busier since we've been here. Just a continual flow of customers I Think a lot of people here are loyal customers that come daily every other day or so.

I mean the food is so flavorful, so addictive. If you were in this area I mean I Don't think it it would be impossible not to stop. This is yet again another restaurant I Would never miss when I'm in Suraya. Hey so where are we at next Budy! This is uh bu Madura very rare food in sua and Bour.

Is it like a porri porridge? Yeah, but it's sweet sweet porridge. Oh okay. so sometimes bour is a salty porridge, but this one Bour Madura is is a salty. It's a sweet porridge.

It's a sweet porridge sweetridge. Okay, great, let's try it. Okay this. oh what is it? It's oh so.

it's made from rice. kind made from rice. fries. sticky rice.

Oh okay. a variety of rice and jellies. palm Sugar I Think wow this P Sugar okay and then p Palm Sugar goes on. This is amazing.

She has all the little pots of all the desserts, candies, variety of rice puddings all ready to go. There's a variety of palm sugars as well that get sprinkled drizzled on top. That's a colorful mixture that's beautiful. What a dessert creation! I Love this This colorful assortment of different jellies and uh, porridges.

Al Together, palm sugar, coconut, and I'll try one of these first. Um, this is what she cut up at the beginning. kind of like the compressed rice cakes. Oh, the sweet and salty combination, the caramelly flavor of the palm sugar, the gummy glutenous rice, and then embedded with the flavor of that banana leaf almost has a pandan Aroma to it too.

and then the freshly grated coconut. oh it's so good and not too sweet either. And then I'm going right into the center here. I Think we have some purple or black sticky rice.

Oh and the porridge or the bour is kind of just spread out on top of it as well. Yeah, and that all of those porridges. They're all rice, but they all have a totally different texture. Some are more smooth, creamy, starchy, others are more silky and more.
I think one of them is mixed with uh coconut cream as well so it has this salty coconut cream flavor to it I would call it almost more Savory than sweet but it's still balanced. but there salt brings out the sweetness and that flavor of the palm sugar and the flavor of the the condensed flavor of the coconut cream. that's great and then that flavor I Had some flavor of the black or purple sticky rice as well and we got some more of the jellies. That's the most unique plate of porridge I've ever had or Kani that I've ever had.

but it's really good and again focused on coconut. Focused on a variety of different textures. You really taste the caram sweetness of the palm sugar and the saltiness. The Savory saltiness really good.

It's like a rice pudding with so many different textures in your mouth. I'm glad we got to try this next up on this Madura Food tour. In Suraya, there's a type of s which is called S Madura which originates on the island of Madura But I mean we're so close to Suraya, so you'll find it all over Suraya. and actually this type of s it might be the most common, one of the most famous types of Sat in all of Indonesia.

You'll find this in every part of Indonesia and so I mean you can't have a Madura food tour without eating Madura style s Okay, so sweet soy sauce goes on. Oh look at those hand skills just mixing and rotating all the skewers. Just with one hand. He picks up that whole.

It's like a bouquet of skewers of Sa and they just like unfolds them onto the grill onehanded using his thumb. His His hand skills are incredible. Onto the Smokey fire because you've got to be you've got to be Fanning The fire at the same time with that smoke. Oh man.

Sat skills and Indonesia has invented Sat on the island of Java and I mean the skills. The barbecue skewer Perfection But he's so good. What a move! He then takes all of the skewers, all the saut off the grill, puts it back onto the marinating tray. That's the Boomoo! Oh the peanut sauce.

The peanut sauce. The peanut sauce goes on. Ketchup Ketchup Manise: Sweet soy sauce goes on rotate, mix, coats them fully evenly, and then puts them back on the grill. So at first he just kind of half grilled them.

uh, half cooked them. Oh man. and now you can start to see the sugars coming out. They're starting to caramelize over that fire.

So peanut sauce goes on some of the ketchup manise and then he mixes that in I think 10 or 12 years ago. my first trip to Indonesia in Jakarta and I Still remember the first time I had s Madura in in Jakarta in Jakarta but now we're closer to the source. Madura is just across the the the straight of water, just the bridge across the island from Suraya. So I mean this is where you get extremely authentic Madura Food Okay so here we go I Love how they roll all the s in the sauce I'm going in from the bottom there yeah some shallots, thick peanut sauce.
make sure you roll completely in that peanut sauce s Madura s Madura First B one Butters m oh man the caramelized sweet soy sauce is I think one of the signature flavors of the S Yeah I think this is one of the best s Madura I ever Tred Oh okay yeah this is first time in this place. oh nice, nice and you you really like this one I like this one. maybe you can add the flavor Yeah they do also have some sambal some uh extra chili sball that you can add. but what I love about it is you taste the caramelized roasted toasty flavor smokiness from the sugar in the sweet soy sauce and then because they cook it over such a hot fire, it just embeds with the smoke and the fire.

Then you got that rich thick peanut sauce and then they do have some sball on the side here which we can add one scoop of. the spicy sball make it perfect. Okay let's go again. Oh yeah I took a I took an inhale of that sunball and the chili fumes just went to the back of my throat.

Oh yes, very good. Like it's not that spicy but but when you mix it together with the peanut sauce it gives it a well-rounded flavor. Um, and yeah, when you inhale it, that's amazing. Okay, I'll add some of theong into the peanut sauce from here.

You can take one of your skewers Co the lantong the rice cake in the peanut sauce. oh I broke mine. Okay, there we go. and then this.

When you eat it with the rice or the L Tong then you. it kind of makes it a complete meal. So you got your starch, you've got the protein, you've got everything you need. Oh yeah, and with the Londong, it's not glutenous night rice.

It's not sticky rice, but it's regular rice that's just been compressed to make it in a cake cake formation. And I love how s can be snack A light meal or a full meal. Whatever you're feeling like, whatever you want it want it to be. The restaurant is called Sat Madura Pakat and it's a legendary place in Suraya he's been selling it for he said since 1980 his father started the restaurant and so it's his original family recipe that he's present deserving and it's so good.

Next up this evening on this Madura street food tour we are eating duck but a special duck recipe from Madura that's called Beek Hitam which means Beek duck and hitam is black so it's this black spice paste mixture that I think is really toasted down that's really cooked, fried down until it turns dark and scorches and brings out the smokiness and then it's caked onto the duck and the duck is marinated in it and then the duck gets fried and then it's that. I mean that's the dish and it's also I mean it's a very special dish from Madura that we're going to try next. That whole bucket is filled with the duck. Alsoo this is the black paste mixture of the boomoo oh you can see all those spices in there.

Well actually it's kind of dark in color so you can't really see totally what it is in it. but secret recipe from mura, organs and paste that goes on. and then you got to have some Sbal. So okay.
okay this place is amazing and it's actually a street food. It's a truck, a street food truck on the side of the road. They don't have tables but they have map along the sidewalk where you come to eat. and again this is the dish called Beam.

It's a specialty of Madura and that smells the aromatics as they fry that it smells so good. Uh, all of that paste which is just fried down until it caramelizes and it is a secret recipe. So I'm not even totally sure what's in it. but definitely garlic.

Definitely garlic. Uh maybe some dark soy sauce? I mean there could be shallots in there. There could be all sorts of herbs. We'll have to taste it and find out.

Well let's go in. we've got a whole leg thigh com but I guess I think I'll just try some of those droppings those droping and mix it with some of the the sambal some of the rice. Here we go. This is my first time to ever try this dish.

Beam M all the crunchy organs in there. Everything is really slowly fried so it just fully brings out the aromatics of everything. and fully Crispies Like not just that crispiness on the outside, it's like fully crisp ified all the way through all the way to the inside. I mean all of those spices are just totally, uh, caramelized down until you got that toasty Smoky flavor.

Oh you taste the chilies? oh that was from the sball that I added as well. Really good. Oh what a dish! Let's try some of that actual duck next. It is pretty oily but very tasty.

Yeah! I think all of that that boomoo past the way it's slow cooked. all of that flavor goes all the way to the Bone Man, that's like the most caramelized taste you'll ever taste. It's salty, it's smoky, it's caramelized, it's kind of sticky. Oh look at the inside of that duck.

It's so juicy too. Really good. And I mean this is what they specialize in. They have a whole bucket of it ready to go.

Um, and they're definitely going to sell out every single night. But we got here right as they open so they're not quite busy yet. and I Love this style too! I Mean they have a strew food truck and just the mats on the floor here on the sidewalk enjoying the breeze. Well, it's still pretty hot, but when the Sun goes down into Naaya, it's such a beautiful city.

I Mean it's clean, it's safe, it's friendly. Yeah, the sunball is spicy. no joke with their sball. I Think the attraction of this dish I mean even more so than the the duck itself is that sauce and all the organs which are chopped up and mixed with that paste and then fried down until they crispy.

That's where the flavor resides and that Sall Wow, that's that will light your mouth on fire. Yeah! I Can definitely feel the oiliness of that duck on my lips, but that is so much flavor, just condensed. and from what I've learned is that the food from Madura has an abundance of flavor. Dishes are usually extremely spicy and the people are extremely friendly.
