Today we're going to go on a seafood tour of Marar. This is a seafood Wonderland Here we're going to first start off at the fish market. Wow look at the amount of motorbikes here. Wow look at those fish.

This is really colorful assortment and then after that we're going to be going to some of the best seafood restaurants. and this city among with many foods is known for their seafood and they're masters of grilling. Seafood So many different flavors in your mouth at one! I'm in the beautiful city of Makasar in Indonesia Hey everyone hope you're having an amazing day! It's Mark W I'm in the beautiful city of Makasar which is a port city on the ocean in the South part of the Sui island of Indonesia Wow, look at those foam boxes! Okay, that's for the seafood. Lots and lots of seafood.

Lots and lots of fish. and this would be the main seafood market where restaurants around Makasar would come to get their Fresh Catch for the day before taking it to their restaurants to be able to eat. So I mean we're going to walk around, we're going to see some of the fish and the Fresh Catch of the Day some of the very unique Seafood that they have here. uh and then after that where we be going to some of the best legendary sea food restaurants.

You can see people from around the city. They come here to do their shopping by seafood and then load it up into motorbikes. Look at that. that's a big a big shopping right there.

Take the Fresh Catch back to their restaurants or back to their homes for seafood. Py Py py Good morning Py Py py py People are just so friendly. Now we're entering into the real Market where the fish is displayed. Okay, watch out.

watch out. Wow. Oh beautiful. So freshh.

Wow. These prawns are gigantic. These are tiger prawns. I Think wow Look at those fish.

Wow look at that fish. Oh what is this one? This one has a a horn on it. Okay okay man, what a fish market I mean Makasar is known throughout Indonesia for their Seafood for their fish. This is really colorful assortment and just the freshness.

I mean everything is just so Shiny Bright Okay, everything is ultra fresh Man I Love the action and energy and the colors here. What a seafood market! Look at this one with the yellow eyes. Now we've come to the sea to the port where the boats come in where they unload the Fresh Catch I mean that's why that Seafood is so fresh here. It's literally fresh off the boat from the night of fishing to the morning.

Market doesn't get fresher than this. Whoa. A stretcher stretcher of fish goes by py py Oh man, the people at this Market are just so friendly. Yes, what's up? What's up now? We've come across some of the fish which is called Bolu and it's a famous fish.

It's a milkfish which is very popular in this region. It's a delicacy. They love to eat it and we're definitely going to eat some of this. Maybe next? So we've come to our first seafood restaurant p and they are grilling up the fresh fish.
I mean these are some of the fish straight from the market which they keep on the grill and then when people come then they're kind of half grilled and then when people come, they throw them back on the grill, season them according to your liking and then to your table. Okay, so first the fresh fish gets cleaned and washed in limes and water. You have a whole ice chest full of the milkfish chopped and ready to go as well. But this is a a legendary seafood restaurant.

uh, kind of a hole-in-the-wall restaurant right in the center of Makasar and they're known for serving the traditional Taste of grilled fish makasar and again, makasar is known throughout Indonesia for their skills grilling fish. They know how to take care of seafood, They know how to grill, they know how to prepare. Seafood So we're going to stop here. I'm especially interested I know one of their most famous dishes is the the milkfish this one rich and then also the milkfish which yes uh normal normal with the sambal yes can we have one of that also yes but taste taste it Yes here.

Oh nice that's a fish innards I think the fish, the fish liver and also the fish, uh I think the oh oh that's sambal. yes that's rich. Richa oh I Love it. Onto the fish, the milkfish is ready.

Man what a Makasar Style seafood feast. And there's some definitely some interesting side dishes that they serve here, but we'll come to that later. We have to begin with that grilled fish. Okay, wash hands first.

so go in for the the Ian bakar. this is the grilled fish that I chose and which he prepared Rich Richa Style with that or just with the sambal all over it based all over it as a grills and this actually was a whole fish. but Micah while I was taking some photos Micah ate the other half so you could see the bones already. but that's okay.

okay let's go in. Oh yeah, you can feel how moist that fish is. okay I'm just going in. oh that's so good.

Oh man. salty Smokey Fresh fish I'm not totally sure what type of fish that is, but it has this. It's not too oily, it's quite lean. really like stringy, fleshy, meaty.

delicious. Here's something that's extremely interesting: Soup: Sadaa which is the meat organ cow organ soup which is common to eat along with ion bakar or grilled fish when you're in makasar. I Don't think I've ever seen this served with any Ian bakar Seafood meal in Indonesia except right here in in makasar I mean they love the Cho makasar. they love uh, organs and beef.

and so it's only it's only right that it's common to eat grilled fish along with a beef organ soup. m oh this one. you taste the flavor of the shallot, a little bit of a nutmeg you taste to it as well with noodles and then you have all the cow organs in there. No, that's a surprising dish to include with a seafood meal.

People love beef here so much you got to have a little flavor of beef, even in a seafood. Feast Next up for the the Buu and this is one of the prized fish. This is that milk fish. We got a a mid midsection of it I'm going to peel back some of that skin and milkfish is definitely very very oily I know and also lots of Bones You have to be careful of all those little bones, but that's also why it's one of the the prized fish.
Look at that meat. Oh this looks relatively. oh yeah, you can definitely see those little bones so you you have to be really careful with all the bones of milkfish. but it's so good for this.

I think I'll dip it into their signature sauce I think it's a peanut based sball there's some cucumbers, there's some tomatoes and lemon basil I Believe in here! Yeah it's like a peanut sauce but has this T tomato to it and I got some of the lemon beel that just immediately refreshes your mouth at the same time. That's the other thing about Makasar is peanuts are so common. Peanut sauce. Peanut soups.

peanuts are so are used in almost every recipe almost every meal I've had here. I think includes peanuts as well. Oh and I don't mind it at all I Love peanut sauce. and then of course oh, there always has to be some extra hot sball as well on your table at all times.

Makar Okay, we're going to get some more fish. Let's get some more of the the milkfish. Oh and that belly down there. The milkfish belly is one of the best parts.

I'll add some lime juice to the sball, maybe add some of the spicy sunball to the sball, and then again, go into that sball, mix it around, maybe put it onto the rice this time. Oh, that's so good. Good the peanut sauce. I mean it's rare I think the combination of peanut sauce and fish is quite rare.

Normally it's like saut or meat that goes well with peanut sauce. Fish and peanut sauce is something I haven't really had, but it goes great together, especially with that milkfish. And we got another soup here, which is a bean soup. You see the shallots in there leaks coriander.

Oh man, oh that's good. Oh I Love beans. They're similar to red beans or similar to, um, almost like pinto beans. It's just really light and just clean tasting.

The flavor of the beans, the flavor of the shallots and just the herbs in there. it's really really good. Oh man I Love beans. Okay next up for the liver packet which was in a banana leaf and grilled and I think he said it was a fish liver.

I'm not sure if it's a type of fish liver or if it's chicken liver. it looks kind of like chicken liver to be honest. I'm not totally sure. Let's try it wo that is creamy and bitter.

oh it might be the like bitter juices the digestive juices of the fish. it does taste like chicken liver but then with a I think the fish energe to make it bitter. let's move in for these giant prawns. I think they're uh tiger prawns come back for the head.

let's peel grilled in the Shell Smokey and he really made care not to overcook it. They're like good size, perfect size one biters tiger prawns. all right let's go dip into the that sauce is really good. Wow that is so muscular, really good flavor and again that shash the Tomato the peanuts in there that ikar is so good, the grilled fish and what I like about makasar style is that it's not sweet.
Other versions of Indonesian style ik bakar can be kind of sweet and they add a lot of the sweet soy sauce. This version doesn't taste like it's uh, really much sweet soy sauce. but it's all about the Smokey fish. the chili oil so a lot more Savory and not as sweet as other Visions Marar style I think this could use a Sprinkle of lime but I did I Did ask him what this was and I confirmed with him it is the liver or it's the the organs of the milkfish he said.

He pointed to the milkfish and said these are the organs of the milkfish wo look at that. It's not just the liver, it's maybe the intestines and all sorts of things. Oh that's a bungee. No idea what this is.

Wow, that's bitter. Yeah. I mean that's the bitter organs of the the milkfish. Wow, that's bitter.

And then finally, we got to go in for some of that belly. Milkfish belly is one of the the greatest parts of delicacy. Oh man, you can feel how oily that is. I'm going to dip in though.

everything must be dunked. Wow that melts in your mouth. Oh man. I Really love that that milkfish.

It's one of the highlights for me. it's just so. the texture is great, the the flavor is great. It's such a firm firm meat and an excellent makasar.

Style Seafood meal but we have a lot more Seafood to eat. we are at the next seafood restaurant from the main road. You kind of go off onto this side Alley Road and it should be right down here. This is something I Am extremely looking forward to eating.

Think we should come down this street. This is another legendary restaurant. Oh here it is. Yes here it is here we go.

This is the one here. It is the pot. the boiling fish heads. Wow this one is the jumbo.

Yes jumbo size jumbo no this medium, medium medium. okay okay. the soup, soup and oh and the broth. The broth is over here.

Okay more broth goes on. Oh and then some fried fried onions go on top. Fried shallots. Yes okay all the Indonesian Touch This one is ready ready.

Okay they've invited me back into the kitchen to see the pot of boiling fish heads. and man as soon as you step back here you could just smell the aroma, the boiling this acidic fruity Aroma from the Bimi fruit. Uh but then you smell the fish. Aroma Looks like there's turmeric in that broth.

There's chilies in that broth. Um and they're They're really nice though. Yeah they have different sizes of heads but they said that the the jumbo which they call Jumbo uh was sold out. maybe? or they didn't have any for today.
but then he Dug Dug around and he did find a large size. It's not the not the jumbo but it is a large one. Oh here we go. Cool restaurant, very home style and this restaurant I know they've won a lot of awards.

uh as some of the classic uh legendary food of Makasar. and I love the aroma I love the look of it. it smells so good. What a what a spot! This is a Makasar institution.

First got to make sure you wash your hands cuz you definitely need to be eating fish head. Curry Maybe we should rehydrate the soup. let's just try that broth first. Yeah oh man, you really taste the turmeric.

Oh okay but it is time to season. Okay so let's go in with lime juice. Oh man, look at that collar meat loaded with meat, that fish onto the onto the rice and usually the typical way to then then eat it is to just add the soup to your rice, let it fully absorb, add some sball, oh yes and then go in with the fish with the sball rice mixing and matching. Oh man, yes oh that sball again a fiery Sbba in masar.

That fish is so firm. Wow, that's a good fish. really really firm. Yeah I mean again.

I'm sure this fish has was caught fresh in the morning, maybe directly from the market or for their from their own supplier, but definitely want the fish we probably saw at the market with that sprinkle of lime juice to kind of balance it, give it that acidity. Um, with that. Sall Oh that makes it so good. And the flavor of that turmeric, Man, and that fish itself though, is incredibly buttery.

That fish is delicious. and I mean I think I'm sure that's why they make a a fish head curry with it too, because it's so firm it holds up man. I Love that fish itself. That's like the texture, the silkiness, the butteriness, yeah, the freshness of it as well.

There's a lot of parts to explore. I Think this is the cheek parts of the cheek section. You can see how oily it is. Oh look at the inside of that.

That's the a massive cheek actually. Oh yeah, for this bite. We got the the chili in there as well. This is just comfort food.

It's hearty, nutritious, delicious. I Think one of the partly one of the good things about this fish too, which a lot of people would enjoy is it has a lot of you can see those lips. Those lips are huge. It has a lot of skin blubbery skin so you can actually just kind of dismantle the entire fish parts of the jawline.

The delicacy as well. the lips, All the skin. o It's sharp though. Oh man, those teeth are really sharp.

Wow oh man yeah that skin is incredible though. Such jelly gat texture. Rich Fatty fish oil is just melting fish lips, just melting on your tongue. That's really tasty.

but yeah, don't lick too hard. Well, those teeth will actually cut you. Look at those. Look at those teeth are RA are sharp and I'm loving those.

BMI The BBY gives it a kind of a just a mellow sourness, not too strong. All that's left left, the eyeball popped out. Oh yes, this is going to need some sunball. Okay, this is like an eyeball shot.
Oh yeah, the eyeball. All of that gooey material, the gelatinous Mhm, and the eyeball is a delicacy around the world because of all those different textures that are in it. Oh yeah, it's suol. it's great.

and that wraps up. another. I Mean anytime I have the opportunity to eat a fish head? I Take it. I Love fish heads I Love the meat that it provides.

all the different parts. All the different textures from the skin to the um tops of the head, to the cheeks, to those inner inner parts that's often like really tender, really gooey, sticky, rich and fatty all the way to the eyeball. Yes, fish heads are just extraordinary. Self-service bananas for dessert on your way out.

Great place! such friendly service! W Muki And we met with the owner on the way out as well. He's so friendly. What a spot this is the SP The spot in Makasar for fish head for our next Seafood meal. we're with Ficky and FY where are we at for for dinner? It's it's a local seafood restaurant.

It's famous among locals. It's famous because they have a Plenty faran of Fish so you can look okay. great and this looks like a really popular spot. Uh, huge family tables.

We're going to head immediately into the kitchen to see some of the fish, some of the seafood and then also the cooking before we start eating. Man, they have all the fresh kitch. This is straight from that fish market this morning. all on Ice All ready to go, ready to be served up.

We met up with Mrs Atun. She's the owner, she's a legend and she's going to cook for us and show us around the kitchen. Yes, oh these are the cockal right here in a in a broth in a soup. okay oh Chili's in there.

you see some Basils and lemongrass. Wow okay yes. chili is okay. okay p make okay oh man oh that smells incredible.

The aromatics tacles have popped open. Wow! wow it's the deep frying station right now. they're frying the prawns stir fried in Sall okay oh it's on. Oh yes it's sting beans.

P One of my favorite foods. Oh do you like it? Yes! I Love it. I Love it! We got to get this raging hot fire. all the sball all the stink beans and shrimp and sball Wow look at this sunball station.

Oh and this is another type of okay okay oh is this one that that one looks spicy and this one I Love the Chili's in there. the lime's floating around. Wow look at that color. It's a tub.

A tub of Sball mix with very very good. Okay I can't wait to. Dy Whoo! That's a massive amount of Sball I don't it's overflowing. Uh, they name it after people who take other people's husband.

Oh okay. spices because it's so spicy. Yeah okay. oh that's the name of the Sball.

Okay oh man, this is an award-winning Sball table right here. and Mrs Atun. She's hilarious she is. She's such a friendly, such a she loves to joke.
she's just. you could just tell her warmth and hospitality and that's part of the reason this restaurant is so successful without a doubt. Oh man, S's on the next level they're I think they're preparing for a massive massive dinnertime. Rush Although we got here a little bit early, right? and now we're moving over to the grill station.

Oh yeah, that's a catfish. These are sea waterer. catfish or fresh water. Sea water.

Sea sea water. Yeah. butterfly. cut the fish so that it lays flat.

Oh then it goes onto the grillak. Bakar Yes I Love Ian Bakar they made it with made it with love. So tast. So she said there soy sauce, there's brown sugar in here or like home sugar and then all the boom boo spices and the secret ingredient.

Mrs Atun Mrs Atun Love she said. Okay and she wants she's putting on a catfish. Yes yes, they said that the catfish died because of accident. Oh okay okay, it's a broke car.

Okay, like the number one man for the oh, he's the Grill Master Okay, okay, didn't me. Wow. Beautiful. beautiful.

You can see the oils, the juices coming out I Love it when they brush on that sauce. Oh it's so aromatic just absorbing the smoke from the fire in that econ bakar and just dripping and sweat. What a spot! This is a seafood Wonderland here Oh man. oh and immediately takes off the girl and then load it up with the Richa Oh oh full lathering.

Oh and the next one. Give it the full Sball treatment. Yes, there's still more coming. Mrs Atun What is this one? Sweet SAU Sweet sauce.

Okay, oh like a sweet and sour sauce. The food just never ends. It keeps on coming. Oh, there's no D doubt that.

Mrs Atun is an absolute Legend and part of her success here. Why so many people? uh, why so many people love her food is because of her. Like friendliness because of her friend. Yes, okay, no, no, no rice, no rice, no rice.

No Okay, what should we begin with? Okay, so first these clams. the the cockal. Okay, dip it into the sauce. Yes, okay.

dip it into the Sball Sall J Lemon Okay, oh S K Sour Spicy. Wow. The sunball is incredible. So you can taste the the sea salt in your mouth.

that's oh, that's sea salt. Yeah, almost from from the the clamp. Definitely definitely the juiciness. Yeah yes.

and that sball is just incredible. Salty, a little bit sour and just straight chilies and lime. Served by the owner and this one is squid. Real squid with a sball on top.

Okay Ohi okay any better. and if things could not get better Mrs Anon she she fed me Life gets better and better. This place gets better and better. Oh the squid is so good.

Uhuh oh okay. use another s a different sball for this one. okay okay. shrim paste shm paste s hot, okay spicier.

wow like a SL of the wife. uhuh the spice level. the spice level is to slap your yeah slap like your wife slap you like your wife. oh you take a slap in your face M Now for the soup.
Okay Mhm. you can actually feel the the spice in there. the turmeric, the ginger turmeric, the the lime leaves Chili's in there yeah oh that's that's. like mellow and calm.

Oh that's a that's a move right there. Oh you that that watery sball? That one is amazing. They add um some fragrance to the fish I believe that one. just it's spicy.

it's sour and salty. Wow. I We haven't even tried like not even a quarter of the things on the table yet. We have so much.

Yeah, Okay, yes Sa okay wow Maki Oh wow I Love I Love P One of my favorite foods so it's my favorite They they kind of ser oh egg gland is your favorite yeah I Love egg gland too. I think she might feed me every dish. It's so creamy. the flavor of the garlic, the chilies like melted in your mouth right melts in your mouth yeah just slides down.

oh it's so good. Oh so this this fish goes together with the the Green Mango sambal because the flavor of the his is sweet so they put some uh sour to it. Okay, it's time for the next bite. This spice sour yeah that mango sourer.

wow yeah and then they love it sour here I love that natural mango sourness along with the smoky fish along with the sunball. Again, food is stunning. So good, really good. overwhelmed and I don't think I've ever been fed that many bites from since I was a baby.

They love to to serve you and family. oh thank you they they they AB a family Maki okay good T Makazi now it's time for Rice she's going to serve it okay K Maki Mari okay oh man so that okay that that sauce I mean it isn't just pure chilies, there's tomatoes in it as well I Don't know. Okay and some more mango on there man. I Love the fruity chili combinations.

Aune just hooked me up with the mango. You can take some of your mango I Just love all the different salls. you're going to add some f vegetable. Next up this one is the the water spinach or water.

Morning Glory We take a water spinach, take the fish, take some mango and some of the the fish all in one bite. Yeah all in one bite. Yeah that's the one. Wow.

The combination bites. Yeah so many different flavors in your mouth. That one you know what. You can mix everything here like you can add the clam, you add squid to water SPS everything and eat it with one one bite.

Man you got to know the the combinations that go well together. Yeah it's going to make your own flavor in your mouth. Yes oh man and that one. you have the the saltiness of the the water.

Morning Glory you have the mango, the sourness, the spice of the fish. it's kicking him. Oh okay yeah we we still have more dishes to try. This is a fried.

it's a snapper fish fried Snapper okay so you can take some of the fried Snapper wow that's crispy Oh pedy maazi oh she keeps loading it up. It's never ending Food Here we go. this is I think this is one of the best. one of the best salls ever.
Oh yes this sball oh so really good right? Oh man that's good Yeah the sour in it make you want to more and more like enhancing your your your I love that s that is just the flavor. It's their signature. They here that's your own signature ZB yeah and I love the wateriness of it as well. You can just like like drink it.

Almost okay it's time for the squid and the black ink sauce. T Makazi Okay M Well the flavor of the basil in there, yeah oh yeah. they somehow make the EG kind of tasty for the sweat. Yeah yeah yeah.

and then that's like oh there's even some herbs in there giving it some flavor. Then the next dish shrimp with tomato sauce sauce. tomato sauce in the red sauce can mix it everything. Okay, you can mix it together with the squid.

Get that red sauce? Yeah, that is more like a sweet and sour sauce. Sea grapes have arrived, one of her signatures, fresh out of the sea. Oh you dunk it in the sunball. Oh yes I wouldn't want it any other way.

then totally submerged in that sball. oh yes. Ter Makazi mhm oh wow that's amazing. uhhuh together with theps oh good, the clams, uh the paluma and the another award-winning combination.

okay man I love the you taste the sea water flavor but then when it's in that that Citrus it kind of like balances the flavor out. They kind of wash the flavor on your mouth. Man it's so good. I Love the kind of like texture and it's a superfood as well.

It's very healthy. It's a fresh very healthy. This is an overwhelming meal. The quantity, the deliciousness, the hospitality.

Oh man. I Thought we were going to spend the night here. She just she is. Her hospitality is unmatched.

Bring all the foot here. She's a legend. What a legend she's She's a hero of Makasar and Py. What do we have here next for? Desert Estell if you literally translate it in, English it's meant Tipsy Tipsy Yeah because it's everything in there.

Okay, it's about to like tip over the jack fruit. There's lots of fruits in here. yeah and then brown sugar sauce and chincha. Wow.

this one is signature from Masad. It's called Kachang Disco. Ah okay so it's a peanut. They fry the peanut with the flour so it makes crisp those little those little brown things.

Yeah it's like a peanut. Okay, we made it to dessert. Yeah so let's try try it. m there is a brown sugar taste to it.

they have brown sugar paste to it. the coconut flavor too. Yeah M there like coconut water. they mix it with the avocado juice.

the avocado juice. they mix it all together they why they call it Tipsy Tipsy Oh I Love all the different names here in Marar especially the samb balls the name for the Sball the names for the desserts. yeah we use a unique name here mhm a lot. Oh this is really good.
You've got the the fresh fruit in there, the avocado juice and the coconut and then the prey avocado. Yeah they even put the the meat. yeah the meat avocado here then man it's really good. What a what a just legendary meal.

Oh man. I Didn't think Auntie was going to stop feeding me and as you can imagine, that meal just continued. She kept feeding. She kept dishing more and more food onto to my plate.

The flavors were spectacular. The hospitality guaranteed her success is due to her delicious food. but her Hospitality even after uh we finished and we were just sitting there nursing our stomachs, you could see her. just her energy.

She just walked around from table to table. So I mean she was not just doing it for us, but she literally radiates to every single customer that walks in the door.
