SAMGRELO - ZEMO SVANETI, GEORGIA - Welcome to Western Georgia, a region that’s known for delicious cheese and some of the spiciest and most complex food in all of Georgia. Today we’re taking a road trip, will be eating some food along the way, but finally making our way to Zugdid for some of the greatest Georgian food in the county.
Restorani Zgapari Rikoti (https://goo.gl/maps/UzzK2AhiWWwS27pp8) - Ubisa, Georgia - Just a few hours from Tbilisi, we started our food tour today at Restorani Zgapari Rikoti, in the mountains next to a river. They serve regional Georgian food and they are known for their wild mushrooms and fried chicken. It was another amazing meal, with unique dishes, and lots of walnuts and cheese.
Bikentia's Kebabery (https://goo.gl/maps/dDSfTdZp7tmd3J1R8) - Kutaisi, Georgia - Kutaisi is a large city in Georgia and we didn’t have long to stay, but I wanted to stop for a very quick kebab at a legendary restaurant. Turned out delicious!
Folk House (https://goo.gl/maps/oMS58D5XCXNKy3Rj6) - We finally made it to Zugdidi, Georgia, and the destination of the day. We went directly to the Folk House where we met with one of the most interesting guys in the country who is an artist, collector, singer, musician and Chef. He cooks some of the best local Samgrelo food. There were so many dishes I had never heard of or seen before. I loved the cold walnut stews and the highlight was the elarji, one of the most unique of all Georgian foods. It’s cornmeal with a huge amount of cheese mixed in. It’s probably the world’s greatest cheese pull!
"Sisatura" – Ethno village (https://goo.gl/maps/JFU13thXq8BUkB1t6) - Finally to wrap up this amazing day of Georgian food, we went to an Ethno village where we learned a little about the local Samgrelo culture and ate another fantastic meal!

Hey everyone hope you're having an amazing day! It's Mark Wiens I'm in the beautiful country of Georgia and today we are taking a road trip from Tbilisi to a place called Zugdidi which is all the way in Western Georgia and it's known to have some of the spiciest, most flavorful food in the entire country. On the way we're gonna make a stop at an amazing restaurant in the forest. It's gonna be another delicious day of food in Georgia he's standing on a chair the greatest cheese pole on Earth in the history of the world and I'm gonna share all of the food and this entire drive and experience with you. Everything coming up right now in this video.

So we're just stepping out of the car this morning. It was about a two and a half hour drive from Tibilisi so we're gonna have our first meal here today. Foreign going that's kind of like a sauteing liver with onion. Smells delicious and some spices and then a whole fried chicken.

oh that goes on to a clay pan to be served, Then over on the other side of the kitchen they are baking Kachapuri which is the famous Georgian cheese bread and then they put this whole ball of cheese on the inside, flatten it out and then bake it. What a cool oven! Foreign. I Don't think it even has a batter or marinade on it. it's just like straight up deep fried.

Oh man. food looks amazing here and like you need some warm food here in the mountains. Okay, so actually we had pre-ordered and all the Food is ready on the table as soon as that Fried Chicken was ready. Man, what a spread! Amerettian food.

Absolutely incredible. We have the Fried Chicken We have the fried liver plus a bunch of other dishes. a nice salad with Walnut paste. There's some sausages, some beautiful bread, some fried potatoes, and I didn't even see at first but those are.

It looks almost like meat. but I think those are mushrooms, chanterelle, chanterelle mushrooms I think I gotta start with that that Fried Chicken while it's hot and fresh, oh man, that's one of their special Foods it's so good. It's so crispy the skin and I think it's pretty much just salt on there and this is one of the the main sauces of Georgia I believe there's coriander. could be some sour plum in here.

All right. this sauce here for the chicken oh that sauce is amazing. kind of has an acidic flavor to it. I think it's sour plums.

it looks like artichoke. I believe I'm not totally sure it looks like artichoke Walnut paste garlic. Put this on my plate and then we have another one. Another type of vegetable also looks delicious.

full of that Walnut paste man I Love the the use of walnuts in Georgian Cuisine because it's special to eat with the cornbread which is heavy. extremely solid. Um oh wow. Oh all the kachapuri has just come.

You can barely have a meal in Georgia without kachapuri and there's so many different kinds of variations. Oh this is a mountain warming look at the ooziness of the cheese fresh out of that one. Wow, that's hot. Um, the ooziness of the cheese.
Again, that's so rich and warming buttery. Okay, next up for the mushrooms sauteed with onions in a clay pan. These are local mountain like chanterelle mushrooms. Yeah, I thought it was chicken at first.

Oh wow. Okay, that could be the dish of the meal right there. I'm not sure if there's butter in there, but Rich gonna go for some of the salad and again, this is one of the classic. Georgian Salads with cucumber with tomato with Walnut paste with a variety of herbs.

there's some onions in there red basil, parsley. oh the tomatoes are so juicy and then I love the crispiness of the onions red basil which gives it this fresh herbal taste to it. I think it's a mix of livers sauteed with onions. Mmm hmm okay.

I think that's not only liver but a mixture of organs because that was a piece of lung I Believe So the entire dish is just like caramelized organs. And then we've also got some sausages. It's called Kupatine. Okay, um oh that has so much smokiness meat, a little bit of chili in there that was incredible.

On the road on our way to the next place we came here literally on a flyby stop. We're gonna be here only for like 15 minutes just to eat at this one. Kebab Restaurant Foreign Georgian Kebabs So they're not actually grilled, but they're pan fried in oil. They just smell incredibly good.

These cylinders tubes of kebabi meat. Once you order, then he puts them onto a plate. He scoops on tomato sauce onto the top of them and then a handful of chopped onions and I Believe coriander or parsley. This is fast food.

Delicious Local Georgian Kebabs: I Can't wait to try it. Oh, get a half a whole loaf of bread. Half a loaf of bread. Nice.

Oh yeah, there it is. Okay, so it's served counter style. and I love these sanding cables. You can eat it with bread.

You can eat it as is. You got a fork here. Again, these are not grilled kebabs, but they're fried kebabs. Shallow fried, salty, crunchy meat with that just acidic salty tomato sauce.

Um I Love the parsley and onions and the tomato sauce. Really tasty fast food. Just you're in here. You're out here.

You don't even sit down, you just stand up. It's delicious. Oh yeah, that's refreshing. That just calms the saltiness of the kebabs in your mouth.

Gonna add on a little bit of that chili to this bite. So that completes our very 15-minute visit to Kutaisi. We are jumping back on the road because we need to get to Zugdidi for afternoon meal. Welcome! We have just arrived to Zub-d Has a totally different feel and look here almost feels tropical we're in Very.

Western Georgia And here's the restaurant we're going to. So this is a a local restaurant. It's a punk house poke house and our host is okay. Hello! English English A Museum of Folk house.

He's an artist, he's a musician and a singer and he's a chef all at the same time. This is the oldest thing what he have from ancient time. Stone Century This has to be the coolest modern Festival ever. Just a stone slab I mean okay.
Mint goes in coriander, coriander, garlic, garlic. Amazing. Brilliant Egg means knocking. Oh okay hey hey, the Stone Age Mortar and pestle.

This is amazing. Oh this is for sure the coolest mortar and pestle I've ever seen in my life. You can Mash pound grind. it's so effective and those juices of the mint and the coriander are just coming up.

Yes, wow, that was serenaded. but the hours will. so. um, that stone one though is just amazingly effective.

This one includes parsley. Dill garlic, green chili and salt. Oh cornbread. Cheese with cheese? Okay.

beans. Wow ing. Oh wow. Even more dishes on the table.

So many different dishes I Don't even know what that is. There's beans. there's gonna be little cornbreads and some stews. Looks and smells incredible.

Fish intimately. Oh my. God that herbal sauce. Yeah.

Take Miley So there's dill and coriander. and oh, we made that spice and then that's the fish is cooked with it. Okay attack. Molly We've got another dish here too.

Oh like a cold cold Walnut Paste What a cool table. What a spread! Oh man. totally unexpected. I Had no idea what a character he is.

Amazing! He's won cooking competitions he's been on. TV he's like he's like a Master Chef I Love the use of walnuts again. I Just can't get over it In In Georgia So good. This fish with the green sauce.

Oh yeah, it's served cool also. Oh wow that's amazing. Okay this is some of the dill coriander sauce. This is the sauce we freshly pounded onto the bread.

Mmm oh it's so good. So herbal and show like refreshing look at how juicy it is. All that green juice, so vibrant especially for you. Oh wow the Walnut is just amazing.

It's just like pure. Walnut foamy, milky like a juicy nutty. It has a smokiness to it too. Okay, thank you.

Okay my lava. Cheers! Georgian Wine It's a beautiful sauce. It's so bright and colorful. Just a red pepper sauce.

this chicken that color it's bright orange. Oh and as I'm about to take this bite, he's going on the piano. He can do everything. Wow! Now when it's amazing.

this incredible sweet chili paste. Foreign. Oh so he took that that mint paste we pounded. she's rubbing it on the rubbing it on the cheese.

Wow. Ed with that that mint that we pounded on the Stone Age mortar and pestle. Um, oh so this is the it's a cornmeal cornmeal. Next oh, makes a little hole and the cheese goes directly into the center.

Oh wow, that's straight up like a cornmeal with cheese. The next dish, he sings a new song. with every dish, he's on the piano again. What a happy man.

I Know those beans smell amazing. The nuts again. Walnut How about this one? Batman Face length foreign. Oh they're so crisp and juicy.
Wow, that's fresh. Not too spicy yet, but you can tell that it's growing. Um, that's pretty decently spicy when you get to those seeds. Oh wow.

Another dish to get some of this chicken. Oh oh wow at chicken is absolutely incredible. Walnut Sauce Garlic chilies. Wow, that is a lot of cheese.

He puts the all of that cheese in there and just kind of mashes it in. Oh, it's got this elasticity, melted, stretchy cheese. What a texture it allowed. a Jeep Well, it's called a lot of G Okay, a lot of.

G Oh, he's brought it out to even go higher. He's standing on a chair. it's hissing me hear the roof. I've got to try it.

Okay, yeah okay oh man. this could be the okay You want to grab like a big chunk so that it can stretch. Oh no okay. there's quite an art to the cheese.

Pole It was thin but we made it. That was the greatest cheese pull satisfaction you'll ever have in your life. It's stretchiest food on Earth It's even challenging to serve it because it's so incredible. This gives a new definition to stretchy cheese.

Oh man, you stretch it up like this and then you'd kind of just break off a piece. but she already served me a nice A Nice Slice there. But it's just. you can tell.

There's definitely some some humor involved in this dish. Well that's like that is serious amounts of cheese. One of the kings of all Magrillion dishes. Something that you can tell has so much pride and has so much culture involved.

Something everyone loves. This chicken is absolutely incredible. Sauce is actually the star move that in The Taste is different. Yeah with the with the chicken sauce it's amazing.

It's time for another song. Foreign? no idea what to expect. This just blew me away. Something Things I've never tried before.

the hospitality. the I think the the funness of this meal and the stretchiness of the cheese is what I will never forget. Truly an amazing experience and he truly is a character with so much passion and amazing cooking. From here we actually have one more place to go to.

Jesus My husband he always established little piece of Summer small migrillion ethno village culture, history and traditions. So this is one of migrallian traditions. something like welcome Rachel's And so we're entering into this compound which is a whole yeah ethnic Village to preserve the traditions of Sangrelo. Place is incredibly cool.

This is the original Mill for grinding wheat and corn and it's the original one that the village used to use. So the water is Flowing here from the pond and it's going to turn. We're going to watch as it turns the mill. the original.

Oh here comes the water flowing. a little bit dark, we're using the last few bits of sunshine but that is so cool. The original Mill And we are now at the dining room where she's gonna demonstrate one of the dishes in this huge wooden. Bowl So a lot of mint.
okay A little bit of coriander coriander yes but a little bit not so much because dominant is mint okay but it is special taste and juice. garlic of course. a little bit of green pepper but a little bit salt. Pieces of garlic should disappear like a sponge potato cheese and it's it.

Can be like sliced easily. yeah very easily. Now we have to slice it in a very thin thing. If it's winter we adding milk because the fat not enough fat.

but in summer we add water because it's full of fat. Okay you see, oh yeah, it's melted, stretchy, more stretchy cheese. Okay yeah, we will make something like Bowl here. Okay, it's coming.

transferred to the giant wooden Bowl Like stretching it like pizza. Perfect. Thank you thank you. Yeah huh.

Grinded peas? Yes Yes Yes Yes Okay, the most delicious is like making roll like a roll it up. It has a shape of sand. Wow. An amazing process.

Okay this is the cheese. that cheese roll with all that juice. beans. Oh that's amazing.

It's so milky and juicy with that mint that just kind of complements it. And the coriander and the garlic. Talk about a culture of cheese. So you've got to add a piece of this cheese inside.

Oh you put it on the inside. Oops. Okay, so you take that cheese. yeah, put it on the inside.

This is a beef stew with walnuts and beef and walnut sauce. Oh man, this looks good. I'm going to put it directly under the okay. Here we go.

Another amazing Walnut stew this time with beef. Oh yeah. very hot. Oh it's so good.

The beef melts in your mouth. the nuttiness. Again, those Walnut okay. next dish I have to try is eggplant stuffed with Walnut paste that's just creamy on top of creamy.

the creamy eggplant, the creamy walnuts, the garlic in there. Next up are the beans. Immediately taste the coriander in the myth in those beans and then garlic. Another dish is beef with vegetables.

Wow this looks amazing. Oh man looks so tender. Chili's in here coriander I'm gonna add this to the corn meal as well. Oh man, this food is amazing as well.

It tastes like a lot of chilies in there. not spicy chilies, but just the sweet part chilies. It's got to be wine in this jug. Foreign local green tea.

really good. That's exactly what I need after such a such a day of cheese and amazing food. To be honest, I Had no idea what to expect when we left Tbilisi this morning I thought it was just going to be a simple day. We'd have a meal here in zoo DD of Magrelian food and then we'd continue on our way.

but it's just turned into one of the most memorable days in Georgia so far. The hospitality, the food, culture, the different dishes, just the the feasting culture and celebration of food has been amazing. And the learning about the local culture that's the most cheese I've ever eaten in one day in my life. This is not a big region, yet it is a very special region for food and again some of the spiciest food, some of the cheesiest food, and some of the most walnuts food that you'll ever find throughout Georgia throughout the world and that's gonna be it for this video I Want to say a huge thank you for watching?     I've been watching Mark for what must be close to ten years. Glad he FINALLY made it to Georgia! I lived in Russia for many years and have been to Georgia numerous times. Such an underrated country. It's so small, but so much to see, do, and most importantly, EAT!
