This year I spent Christmas in Phoenix, Arizona, back in the US for the first time during Christmas in about 6 years.
One of my favorite Christmas foods is Mexican tamales. So the day before Christmas I headed over to my friend's house and we made a bunch of tamales. He had a great idea to add green curry to a tamale, so we made some Thai green curry tamales and also plenty of regular beef and pork red chile tamales.
It was a lot of fun making the tamales, and even more fun eating them!

Only now watching this video. My mom was an amazing pro Mexican cook who would tutor others on making tamales sometimes so we had the best Christmas's. She made sweet tamales with raisins, pork and beef also and we'd enjoy them on Christmas eve but the best was the next morning when she'd fry the pork and beef ones and the masa would get crunchy. She made an atole, which was a pecan flavored hot drink to go with them. Just the best!

The singular form of “tamales” is “TAMAL” without the final “e”. Nevertheless you did a great job making that tamal. Yum! I miss tamales! 😋
