BANGKOK, THAILAND: Easily the best all around seafood restaurant I’ve been to in Bangkok is Baan Pu Khai Dong (ร้านบ้านปูไข่ดอง) a restaurant where owner and chef P’Note sources his own seafood and also often goes fishing himself in Southern Thailand and brings back the catch to serve at the restaurant. We started this Thai seafood meal with the fresh giant grouper. P’Note and staff are highly skilled at parting and slicing fish. They parted it out, and actually for our meal we enjoyed some of the lesser known parts of the giant grouper, but some of the best tasting - like the collar, cheeks, and face. The pepper crab was loaded with green pepper, garlic, and kaffir lime leaves. Another favorite dish here are the penshells, or sometimes razor clams if available cooked Hong Kong style with tons of garlic, green onions, and mung bean noodles - the best!

Hey everyone hope you're having an amazing day. It's mark wiens, i'm in bangkok, thailand and tonight for dinner, we're going to what is one of the best one of the top of the top thai seafood restaurants. It's called banbu kaidong pinot, who is the owner, he's a fisher uh. He specializes in the best quality fish.

The best quality seafood and tonight he's gon na make us a bunch of different thai seafood dishes, but especially a giant grouper. So i can't wait to share this entire meal experience with you all of the seafood in this video. Oh, it's going to be a massive dinner tonight. I love the setting here because it's a garden setting and then he has kind of rooms off on both sides.

Lots of plants, lots of tropical greenery and also one of the cool things about this restaurant is that all of the seafood is live and fresh, and so, if you go to the back, it's an entire aquarium of different seafood available, including a giant grouper. I'm also hanging out with my friend pitan and pita for dinner tonight as a quick story just so it was just a couple nights ago, but i'm hanging out with my friend pitan and piteb and we're driving around uh and pitan said: let's go eat seafood tonight. So we stopped at this restaurant. The area in bangkok is called bangna.

You would never know you're just like a stone's throw away from the massive highway, and then this is just a hidden gem, a secret garden of the best seafood, and so we came here. We had a dinner we met, pinot was the owner, he is a fisher, he specializes, he curates. He is a purveyor of the best highest quality seafood and that meal was unbelievable. It was a life-changing meal and so i said we have to come back.

We got ta make a video here. We got ta eat here again, and so i am just as excited as the first time to share with you this entire seafood meal. Oh man, this place is a it's a gem hope you're already enjoying this video. So thank you in advance for clicking thumbs up we're still discussing the order. He can yes, hello. Oh one of the things that he specializes in is called, which is a seafood sauce. Raw frozen crab come on.

Hopefully i mean part of the recipe. Part of the process is they're frozen in juices, and so the first step is to actually put them under running water uh to release the ice around them. Ensuring that the crab, both the meat and the eggs on the inside are ice cream turn into ice cream frozen crap. This kitchen is absolutely awesome and, in the meantime now they're gon na fillet they're gon na cut they're gon na part out the giant, grouper white yeah, so a 40 kilo giant grouper.

This is some of the best fish meat for its firmness. You know you're going to cut it into pieces that you, the the different whoa, there's some green liquid coming out of it. Look at the fish, that's the liver! Yes, oh my god. Okay! Oh that's massive! That's like a 10 kilo fillet! It's so huge! This is so exciting, so one fish you will get two sheep and each sheep will wear like two kilos.
Oh that's the cheek or the better of the sheep, the champ, and he said in one cheek. You get three texture different textures. He said you have to try, and you know why people like try to get this piece. Oh, it's high demand piece highest demand of the whole group, the cheek.

That's that the sheep and in one pieces also in one piece here. The texture will be brown, and here i will be like straight come on the biggest cheek. I've ever seen a one and a half kilo cheek, and so that completes the entire process of parting out the grouper, taking up an entire table, every part and again they're gon na use every single part and i think, we're gon na eat. Quite a few of the different parts too tonight for dinner.

Tonight we had to order the jungle curry, and this time we got crab jungle. Curry i've never had crab jungle. Curry. You know the dam jungle curry is made with an assortment of different meats like deer, but crab jungle, curry next level.

Oh, oh man, she is awesome. He first deep fried the crab um and then she stirred it fried it up with literally an entire bowl full of uh, green peppercorns, garlic, chilies and kefir lime leaves, oh man, the aroma is just out of this world and that just looks insane. So, okay yeah, oh man, okay, shout out to all the staff here they are incredible, so cool and i just cannot even contain myself anymore. We got ta get back to the table and this is seafood.

Insanity yeah. This one is very special. All of the different organs fried with garlic, i think yeah never heard of anybody. Oh wow, oh wow, oh wow! This is the fish liver and this one is the fish moth, the swim bladder, a chewy texture, but almost like cartilage, incredible mama, this one.

Okay, we got ta have this next, the the jungle curry with crab. Have you ever seen it before? If you don't know - or this is the only book - only place yeah and look at the size of that crab huge, you can smell that curry paste that she added in there all of the different finger root. I'll show you the size of the crepe yeah and when we ate this a couple days ago, it was insanely spicy, that's one of the better versions of donut you ever have, and you know you know, what's amazing, okay, so giant! These are the giant tiger shrimp which were deep, fried look at the size of that, so they deep fried them first put them onto a plate, and then she poured over a hot oil solution and then poured over crunchy crispy garlics sip, completely. Okay, just fell apart with the head, but that is meaty, nothing overcooked, okay, the muscularity of that and i got the tamily in that bite with the fragrance of that crispy garlic.

So this is the grouper, the giant grouper look at the size of those pieces and the thickness of that skin and the skin is some of the best part of it. Look at this, the cleanness of the fish, too. Okay, i'll just try the soup first. That soup is just incredible, it's so unbelievably clean and just so pure, like only you taste the fish skin broth.
Then you take a piece of the boiled blanched fish and you dip it into the fermented bean garlic sauce with ginger. I believe it's the texture of meat, that's so unbelievably firm, and then you have all that, like the skin is literally gelatin. It's like jelly. Oh, the texture of the freshness, the firmness is not on another level and then just partnered with that garlic fermented bean umami sauce.

This is one of the best fish meat with the sauce that i ever had the freshest giant grouper. This is what he's most famous for it's: the name of the restaurant ice cream frozen crab with seafood, sauce wow, the sweetness of the crab meat and it just melts in your mouth and then you've got the rich yolkiness of the rope and then contrasted by the Sweet and sour taste of that sauce, the chilies, the raw chilies, the raw garlic, just straight up crab ice cream. It looks so simple yeah, but you have to try it the cabbage, the cabbage just the cabbage with them. We've got a full table of seafood, but everybody is telling me how good the cabbage is that i haven't even tried yet they're all they're all groaning at the cabbage, and i can't wait to try the cabbage now.

Oh wow. Yes, i think the key here is that it's just stir fried perfectly so it's just crunchy and juicy shrimp paste in there giving an umami and a garlicky taste perfectly prepared wow. This is the giant pen shell, which they've made hong kong style so sliced up. The pen shell, with mung bean noodles with garlic, a bunch of garlic - oh, i think, there's both uh kind of raw or stir-fried garlic and also toasted, fried garlic in hong kong.

You often get this with the razor clams wow that is spectacular. The pen, shell, it tastes like a scallop almost and then you've got the the mung bean noodles and so much garlic, so many dimensions of garlic in there, oh wow, that is one of the best jungle curries in thailand, unexplainable, flavor and sweetness of that crab. I think, actually we can say this one of the best restaurant in bangkok yeah. I agree one of the best restaurants in bangkok, i'm shocked, actually shocked.

I can't even fully express myself it's time for the crack yeah. Okay, look at the size, wow! What's good, it's as big as your fish, which again they first deep, fried, and then she stir fries it up in this just insane heap of garlic, chilies and green pepper and kaffir lime leaf, pull it out. It's huge wow, the sweetness of it, and just that like flakiness, it just flakes apart on your tongue. Oh it's insane! Look at that texture, foreign, it's the most pure thing, i've ever tasted! All of us are just blown away by this soup.
I think this is the cheek i don't even have any more words i'm just going to eat. Oh that's! The treat this is my my first time ever to have fish bone marrow. Look at that just straight up jelly in the in the middle of the fish bone, the grouper bone - that is amazing. This is a food.

I didn't even know existed that tastes like jelly soup and it just melts in your mouth. It literally is the texture of a of a soft jello. This is just out of control. You just keep bringing more and more dishes, which is just insane different parts: chef's choice, chef's table the bean sauce; oh wow, yeah, that texture and juiciness and like silkiness and kind of squeeze between your teeth.

It's almost like crab dama, oh man. Thank you. This is the thank you. This is the the fin highest in demand, part of the giant, grouper and you're supposed to just pick it up right.

It's like almost rubbery in your teeth, that's so good, and then you can turn it around to the other side and eat the skin side, just oils in your mouth. It just turns into the liquid now i know, but it is the highest in demand. Part of the giant grouper, it is just stunning, it's a textural dream come true, i'm just like in shock, and ah that was one of the greatest best seafood meals of my entire life and, without a doubt, pitan pita myself. We agreed that this is one of the best seafood restaurants that you can possibly eat at in bangkok, a huge thank you to uh pinot for hosting us here tonight and again the restaurant is called banbu kaidong without a doubt.
