NAKHON SI THAMMARAT, THAILAND (āļāļāļĢāļĻāļĢāļĩāļāļĢāļĢāļĄāļĢāļēāļ) - Welcome to southern Thailand, and one of my favorite provinces in all of Thailand - Nakhon Si Thammarat. The food is some of the best and spiciest that youâll find in Thailand. Because of itâs tropical climate, Southern Thailand is home to many unique and interesting fruits and vegetables. Today, weâre eating nipa palm fruit (āļāļēāļ jaak in Thai), which looks a lot like an alien spiky ball - or a wrecking ball!
In the Pak Phanang district of Nakhon Si Thammarat, in a wetlands area with mangroves we headed to the community center where they grow and produce products from the nipa palm tree. Along with the fruit, you can tap the sap, to make vinegar, alcohol, or nipa palm sugar. Basically every part of the nipa palm tree is useful somehow. But the fruit is perhaps one of the craziest looking fruits youâll ever see.
In order to make the curry, you actually use the young nipa palm fruit, and not the jelly seeds, but rather the woody stem of each piece of fruit, sliced thin. It almost reminded me of young jackfruit or bamboo shoots, with an amazing meaty texture and fibrous. The curry was outstanding, so much pepper and spice, and with a delicious local chicken.
We also made khanom jaak (āļāļāļĄāļāļēāļ), which is a very popular Thai sweet snack made with the nipa palm sugar syrup. They used rice flour, egg, and only nipa palm sugar, wrapped in nipa palm leaves and grilled over fire. Youâll find khanom jaak all over Thailand, but this was by far the best version Iâve ever had, mildly sweet, with such an intense fragrance from the syrup and nipa palm leaves.
It was an amazing day in Southern Thailand, learning about unique Thai food of Southern Thailand and the amazing nipa palm fruit!

Here in Philippines we make vinegar from the palm tree
Thank you ðĪ Mark for this video. Itâs very educational. I use (Nipa) palm sugar in a bottle, where you can buy from Southeast Asian grocery stores. Nipa Palm sugar, a natural sweetener with low glycemic index. Itâs great for diabetic or if you are looking for low glycemic index sugar substitute.

Mark, you can not find any fresher fruit
right from the nipa

plate' cuisine. Yum.

Wow …bibingka…
I only discovered this fruit in another video last week. That curry looks really good, never thought of putting shrimp paste with the curry. I might have to try that sometime.
